Hey folks! I promised myself on Monday morning that I was going to ride my Peloton every day this week. No reason, just trying to set some goals for myself. I have been working hard and want to make sure I move myself after sitting in that office chair for all the live long day.
Well, you know how it goes...the day moves along and things just keep coming up and before you know it, it is 7 p.m., the sink is full of dishes and you still haven't gotten on the bike. Ugh!
I trudged myself upstairs and turned it on and saw this message:
All the sudden, I was excited. 50 rides is a lot! I decided to redo the first ride I ever did on the Peloton, which was a 20 minute beginner ride on August 29th.
I have improved so much! I am so proud of myself! Getting stronger every day! Next stop 100!
So, enough with the exercise report....let's get to the food! For breakfast this morning, I made a mess of vegetables cooked up with Just Eggs and put on a big bed of greens to include spinach, arugula and cilantro. Sliced up some yummy tomatoes and had it with a piece of sourdough bread. All repeats - no new plants for breakfast.
For lunch, I had a smoothie with everything but the kitchen sink in it! Here is what was in this cup...a whole container of blueberries, a coconut milk yogurt, a couple frozen peaches, hemp hearts, flax seed, chia seed, moringa powder, coconut flakes and some pecans. I added a little almond milk to make it thinner. All whirled together and it tasted great! Eight plants added for lunch!
I snacked on an orange in the early afternoon and then had a handful of dried cranberries and almonds. Three more plants added for snacks!
For dinner, I was really hankering for some cornbread, so I made a cast iron skillet of vegan jalapeño cornbread and ate it with some canned green beans and a can of navy beans jazzed up with my regular trio of onions, peppers and jalapeños. It was not fancy and I did not take a picture of it before I demolished the plate. I was hungry! I counted green beans, navy beans and corn meal as three new plants. I am at 33 plants for the week and it is only Tuesday!
In other news, I added a new pencil tree in my dining room this year and I love it! Feels so cozy!
Also, I wrapped three Christmas presents today! Getting a jump on the season!

Boy are you an impressive soul. When you get your mine set on "Get Er Done" you can mark it down as "Done". So proud of you to the "Stick to it" saying you seem to live by. WE, your favorite reader of blogs, are benefitted with so many of your writings. Love the stories of what your up to. The pictures of course are a bonus, as they too, explain more clearly of your tales.
