Welcome November

Welcome November...I can't believe you are already here.  How is that possible?  Thanksgiving and Christmas coming in hot! I did not put up my Christmas decorations on Sunday - but for sure I am doing it next weekend!

We had to say goodbye to Harry yesterday as he headed back to Arlington. Goodbyes stink.  Making plans to go see him in a couple of weeks, even if it is just for the day.

I wrapped up the plant week strong on Sunday, finishing with a new personal record of 56 plant varieties in one week!  Let's recap Sunday.

I had all the same lawnmower ingredients that I had on Saturday morning, except I jazzed things up with some black beans.  Scrambled it all together with Just Egg and ate it as a breakfast taco. It was great and black beans were 53 on the plant list for the week.

At some point during the day I toasted some pumpkin seeds and ate them as a snack!  #54

Finished out the day, with some Farro grains seasoned with a little fresh garlic, onion, cilantro with a side of lemon crumb broccolini and roasted mini cauliflower.  Came together quickly and was good.  It felt like a healthy dinner.  Farro and broccolini were the last two plants for the week for the grand total of 56!  New record!  Woo Hoo!

I also set a new PR on the Peloton.  I know it is so annoying when people post about their exercise records, but I am just so damn proud of myself!  I did a 45 minute class and blew past my previous output record of 192 with a new personal high of 211!!  I never thought I would break 200 and I crushed it.  I was so dang happy.  And also, very, very sweaty.

Hope your weekend was awesome and your Monday is off to a great start!
