Look at all the Plants

Hey friends! I hope you are reveling in Friday-eve like I am.  Bring on Friday!  It has been a busy, busy week of work but in a good way.  Where you work hard all day, but things are getting done and you log off and feel accomplished.  I like that kind of day.  I expect more of the same tomorrow. 

This morning I woke up early.....AGAIN????  It seems that 5:15 a.m. is the new wake up time for this old girl. I fought it for a few minutes, but finally just got up and got moving. Since I was up so dang early I had plenty of time to make the best pancakes in the world.  I sautéed a pear and a few pecans with some cinnamon and maple syrup to put on top of them. I love hot fruit and this was a lovely breakfast. I added pear to the plant list! 


I threw together lunch in 5 minutes flat!  I opened a can of chick peas, drained them and threw them in the Ninja.  Tossed in some onion, celery, cilantro, pickles, mayo, salt and pepper.  A couple quick pulses and chickpea salad was ready to go!  I put it on some lovely sourdough toast with a ton of black pepper and some lettuce.  This was a GREAT sandwich!  Really good. Added chick peas, celery and pickles to the plant list which got me to 40 plants for the week!  That always feels like an accomplishment when I make it to 40 every week!  Woo Hoo! 

I squeezed in a spin on the Peloton in the late afternoon and made the mistake of picking a ride with Robyn when she had on yellow pants. I didn't know that when she wears yellow pants that means it will be hard. ACK!  Is that in the manual?  Someone should tell the new people!  I survived, but it was hard and I was sweating like crazy!  I have not worked out in a number of years where the sweat actually drips from my body to the mat on the floor!  It happens dang near every single Peloton ride. I had sweat in my eyes tonight and had to grab a towel to wipe my face! Who am I? I even have a fan blowing right on me!  Am I going to have to start wearing one of those sweatbands on my forehead?  I hope so!  Doesn't that seem so athletic?  

I jumped off the bike and went straight out for a walk with Judy and the dogs.  It really works out well for me to walk awhile after the spin. Well, maybe not for Judy who has to walk beside my sweaty self. Thankfully, the weather has been gorgeous lately and we get to watch the sun go down on our walk. Such beautiful colors in the evening sky. It is a great wind down. We see a few regulars on our evening strolls.  A little fellow who is probably three or four rides his scooter with his mom and dad and he now waves at us like crazy when he sees us.  We ooh and ahh over his scooter and tell him he is amazing. It is the sweetest. 

I came home and threw some Kite Hill vegan spinach ravioli on to boil while I emptied the dishwasher. Another really easy, quick meal that was made of plants.  I felt like it was a little dry while I was eating it.  I probably should have drizzled it with some sauce or olive oil. I ate it as it was and felt satisfied. 

I often wonder if you guys look at my plates of food and think "Damn, that girl eats a lot! No wonder her pants are so big!" Do you think that?  Never mind....don't tell me. I don't want to know. I should probably hide the fact that I also eat other things during the day. What a glutton! I sometimes eat some nuts or a piece of fruit or granola, seaweed, pretzels or a Pringle or 10. 

Look away...stop naming all the snacks.....keep moving....look at all the plants!   Let's stop talking about it and go to bed!  Goodnight all!

A blank page.  What an interesting thing.  How could something this simple, this plain, this empty feel like such a challenge?  I used to mo...
